The Perfect Dairy Free Cheese Toastie

A cheese toastie is the ultimate Kiwi comfort food, and it shouldn't be off the menu just because you're dairy free. Nudairy's Tasty block melts into a gooey, golden centre and has the full flavour of a good old tasty cheese. It's free from dairy, nuts, soy and gluten.

Makes: 2 toasties. Prep: 5 minutes. Cook: 6 to 8 minutes.

Ingredients

  • 4 slices of bread (sourdough or toast bread both work; use gluten free bread if you need to)

  • Dairy free spread

  • 100g Nudairy's Tasty block, thinly sliced or grated

  • Optional: a thin layer of chutney, relish or mustard

Method

  1. Spread one side of each slice of bread with dairy free spread.

  2. Put two slices spread side down. Add the chutney if using, then the cheese, then the other slices spread side up.

  3. Heat a frying pan over a medium low heat, or heat your sandwich press.

  4. In a pan, cook for 3 to 4 minutes on each side with a lid on, pressing down gently, until golden and the cheese has melted. In a sandwich press, cook for 4 to 6 minutes.

  5. Rest for a minute, then cut in half.

Tips

  • Slice or grate the cheese thinly so it melts right through before the bread over browns.

  • A lid on the pan traps the heat and melts the middle.

  • Medium low heat is better than high heat for a golden, even crust.
