Dairy Free Pizza with Stretchy Mozzarella

Pizza night is the meal people miss most when they go dairy free. This one uses Nudairy's Mozzarella, which melts, stretches and browns on top, so nobody at the table has to have a different pizza. The cheese is free from dairy, nuts, soy and gluten, so it suits most allergy households. Use a gluten free base if you need the whole pizza gluten free.

Makes: 2 medium pizzas. Prep: 15 minutes. Cook: 12 to 15 minutes.

Ingredients

  • 2 ready made pizza bases (or your favourite dough)

  • 1/2 cup tomato passata or pizza sauce

  • 1 clove garlic, crushed

  • 1 tsp dried oregano

  • 1 bag (300g) Nudairy's Mozzarella Shreds

  • Toppings of your choice: sliced mushrooms, capsicum, red onion, olives, pineapple, or dairy free pepperoni

  • Fresh basil and a drizzle of olive oil to finish

Method

  1. Heat your oven to 220°C fan bake, with a tray or pizza stone inside to heat up.

  2. Mix the passata with the garlic and oregano, and season with salt and pepper.

  3. Spread the sauce thinly over the bases, leaving a small border.

  4. Scatter over half the mozzarella, add your toppings, then finish with the rest of the mozzarella.

  5. Slide onto the hot tray and bake for 12 to 15 minutes, until the base is crisp and the cheese has melted and turned golden in spots.

  6. Rest for 2 minutes, top with basil and olive oil, then slice.

Tips

  • Don't overload the toppings. Wet vegetables like tomato and mushroom stop the cheese browning.

  • For a margherita, use just sauce, mozzarella and basil.

  • Leftovers reheat well in a hot pan with a lid on for a couple of minutes.
